The notion of "One Health" represents a modern perspective which considers that the health of people, animals and the planet are all linked.1 To achieve more sustainable health, it is important to think of health as a single health that includes all these elements.
The way we eat has a definite impact on our planet, on that of animals, and also on our health. In recent years, the notion of a sustainable diet has emerged as a way of meeting the nutritional needs of a growing world population while preserving the planet's resources. A sustainable diet is based on a number of principles: opt for a more plant-based diet by limiting meat and fish consumption; choose meat with a label, favoring meadows and dairy products, cereals and legumes; choose seasonal products; act against waste by adapting shopping to real needs and organizing meals in advance; diversify your diet; eat a varied diet without excess; favor short distribution channels; buy as much as possible without packaging...
