Proteins play a central role in almost all the body's functions (proper functioning of the immune system, building muscles, etc.). They are made up of several types of amino acid, some of which are impossible for humans to synthesize (so-called "essential" amino acids), which is why it is important to have a sufficient and varied intake through the diet, as the amino acid composition varies according to the protein source. The main sources are meat, fish and eggs, as well as legumes.
