There are many good reasons to improve our eating habits. Firstly, because our current Western diet is too rich in sugars, fats and salt, and too low in fiber, leading to numerous illnesses such as cardiovascular disease and certain cancers. Secondly, because our eating habits have an impact on the environment: less waste, shorter consumption circuits, seasonal produce, a better balance between animal and vegetable products in favor of the latter, are all ways of preserving the planet.
