The different meals provide a rhythm to the day and regulate food intake. If you skip a meal, the body will make up for it at the next meal, and will tend to store food in anticipation of a possible next "famine". Studies also show that taking real meal breaks helps combat obesity. Indeed, if your body lacks energy, you'll tend to nibble on snacks that are often too fatty, too sweet or too salty.
